Sydney's renowned Quay restaurant will be closing its doors in the New Year, as the space transitions to a new operator. The announcement comes as a significant change for the iconic establishment, known for its breathtaking views of the Sydney Harbour and its innovative culinary offerings.

Quay will continue to operate at its Circular Quay location until its final service on February 14, 2024, serving dinner from 5:30 PM Tuesday to Sunday. In its farewell month, the restaurant will offer a special Quay Experience menu, celebrating its rich history of 37 years in the Sydney dining scene.

Originally launched in 1988 as Bilson's under the stewardship of restaurateurs Tony Bilson and Leon Fink, the restaurant was rebranded to Quay in 1999. It quickly gained fame not just for its spectacular views of the Sydney Harbour Bridge but also for its creative approach to Australian cuisine.

“Quay has been part of my life’s work – a place where creativity, hospitality, and the beauty of Sydney Harbour come together,” said Leon Fink, who has been pivotal in shaping the restaurant’s legacy.

Mr. Fink's hospitality group, Fink, announced that rival hospitality group Australian Venue Co will take over the coveted restaurant space located within the Overseas Passenger Terminal. This group already manages several high-profile venues, including The Squire’s Landing and Bungalow8, both situated in Circular Quay.

Executive chef Peter Gilmore, who has led the kitchen since 2001, expressed his pride in the restaurant's achievements. Quay has made a lasting impact on Australia's culinary landscape, with dishes like the famous Snow Egg becoming milestones in Australian dining.

“Quay has allowed me to express my culinary identity in ways I could never have imagined. It has been the honor of my career to lead this kitchen and collaborate with the remarkable artisans and producers who inspire our work,” Gilmore commented.

Under Gilmore's leadership, Quay has earned Three Hats in the prestigious Good Food Guide for an impressive 23 consecutive years, consistently ranking among the world's best restaurants. This accolade is a testament to the establishment's long-standing commitment to excellence in both food and service.
